Our chef Laurent Renouf is the happy and talented head of this area, assisted by Andréas Goyon.
The excellence and passion of the chefs of the Relais de la Malmaison restaurant
Our chef Laurent Renouf and his second-in-command Andréas Goyon have a passion for the world of French gastronomy to which they bring their creativity, skills, knowledge and experience. Both have spent years refining their talent and have acquired their considerable savoir-faire and forged an impressive work ethic alongside some of the top people in the sector.
Chef Laurent Renouf launched his career with an apprenticeship in a gastronomic restaurant in the 8th arrondissement of Paris called Chez Yvan. It was there that Frédéric Joulin imparted to the trainee his own love of cooking.
David Desplanques, Pierre Pigeois and Patrice Trincali each in turn trained Laurent during his stint at the renowned Hôtel Méridien Montparnasse. He credits them with teaching him the rigorous professionalism that is an essential quality for a chef throughout his career.
Chef Laurent Renouf climbed the career steps one by one, skipping none, until he reached his current level of expertise and experience. We are delighted to have him heading our kitchen team at the Relais de la Malmaison.
His assistant, Andréas Goyon, learned his trade in renowned establishments that gave him a taste for achieving excellence. As a young graduate, he began his cooking career in 2015 under Philippe Labbé at the Palace Shangri-La. It was a revelation for him and helped to form his concept of cuisine at its most noble. His next challenge reinforced his reputation for innovation and culinary curiosity; the opening of the Hotel Georges V restaurant. After this came another highly rewarding experience at the Hotel Sofitel in La Défense prior to joining the team of the Relais de la Malmaison in January 2018. He now assists our head chef Laurent Renouf, who gives him full latitude in fulfilling his culinary vision and passing on his experience to the rest of the team.
Traditional cuisine in keeping with a bucolic setting
Guests of the Relais de la Malmaison are invited to enjoy a simple and tasty cuisine featuring traditional seasonal dishes prepared using fresh and high-quality ingredients. The a la carte offerings from our chef Laurent Renouf and his team include finely sliced salmon Norie wraps for a refreshing starter, a market mushroom risotto as a vegan dish or a surprising dessert combining fruit minestrone and violet ice cream. Such superb flavours can be appreciated even more thanks to our location in the verdant heart of our country park where the tables of the restaurant Les Terrasses du Relais are installed.
